Regina DiCicco’s Lemon Bars

Ingredients 

  • 1 Cup of flour

  • 1/2 Cup Unsalted Butter

  • 1/4 tsp Vanilla Extract

  • 1/4 tsp salt

  • 1/4 Cup Confectionary Sugar

  • 1 Cup White Sugar

  • 3 Eggs

  • 2 Lemons

  • Pam

Cooking Instructions 

  1. In a medium size mixing bowl add 1 cup of flour, 1/2 cup of unsalted butter, 1/4 tsp Of Vanilla Extract, 1/4 tsp Of salt, 1/4 cup of confectionary Sugar and mash together till it becomes a dough.

  2. In a medium size Pyrex Dish sprayed with Pam spread out the dough and puncture the crust with a fork in several places.

  3. Place in pre heated over of 350 degrees for 20 to 25 mins watching not to burn.

  4. In a Medium size bowl mix 2 eggs, 1 yolk, 1/4 cup of Squeezed fresh lemon juice 1 tbs lemon zest , 1 cup of white sugar, 2 tbs of flour and whisk for 2 mins.

  5. Pour the mixture into the golden brown pre-cooked crust and bake for 25 .

  6. When finished sprinkle the top with confectionary sugar and Enjoy!!
