Veggie Siesta (Cuz You’ll Need A Nap after ya eat) Tacos and Double Refried Beans
Ingredients
Olive oil
1 lime
4 Cloves Of Garlic finely chopped
1 Red or Green Pepper Chopped
1 Small Onion Chopped
1 Zucchini Chopped
1 Teaspoon Fresh Ground Pepper
2 Cans Black Beans
2 Cans Brown Pinto Beans
Hard Taco Shells
Cooking Instructions
In A Large Skillet with the bottom covered with Olive Oil sauté together the Chopped Onion, Zucchini, Pepper & 2 Cloves Of Chopped Garlic.
After all is sautéed add then 2 cans of Black Beans and the juice of 1 fresh squeezed lime and stir well.
In a Separate Large Skillet with the bottom covered with Olive Oil sauté 2 Cloves Of Chopped Garlic then add 2 Cans Of Brown Pinto Beans and mash the Beans adding a little oil if needed. Continue to Mash the refried till all Smooth.
Put the veggies into the Taco Shell add the Cheese.
Put on a plate with the Refried Beans On The Side.
