Veggie Siesta (Cuz You’ll Need A Nap after ya eat) Tacos and Double Refried Beans

Ingredients 

  • Olive oil

  • 1 lime

  • 4 Cloves Of Garlic finely chopped

  • 1 Red or Green Pepper Chopped

  • 1 Small Onion Chopped

  • 1 Zucchini Chopped

  • 1 Teaspoon Fresh Ground Pepper

  • 2 Cans Black Beans

  • 2 Cans Brown Pinto Beans

  • Hard Taco Shells

Cooking Instructions 

  1. In A Large Skillet with the bottom covered with Olive Oil sauté together the Chopped Onion, Zucchini, Pepper & 2 Cloves Of Chopped Garlic.

  2. After all is sautéed add then 2 cans of Black Beans and the juice of 1 fresh squeezed lime and stir well.

  3. In a Separate Large Skillet with the bottom covered with Olive Oil sauté 2 Cloves Of Chopped Garlic then add 2 Cans Of Brown Pinto Beans and mash the Beans adding a little oil if needed. Continue to Mash the refried till all Smooth.

  4. Put the veggies into the Taco Shell add the Cheese.

  5. Put on a plate with the Refried Beans On The Side.
