Carla Oakersons Quick Make um ya own Argentinian Empanadas

Ingredients

  • 1 rotisserie cooked chicken chopped into small pieces

  • 2 eggs beat

  • I/2 red bell pepper deveined and chopped

  • 1/2 yellow bell pepper deveined and chopped

  • 1 large onion chopped

  • Oregano

  • Garlic

  • Olive oil

  • Puff pastry empanada disks

  • Turmeric seasoning

  • Mushroom

  • Salt

  • Red crushed pepper

  • Smoked hot paprika

  • Along with any dried fruit or anything ya want to make them ya own!

Cooking instructions

  1. In a large skillet cover the bottom with garlic olive oil ( Optional sauté 3 chopped cloves of garlic) on medium high heat sauté the peppers & onion

  2. Add chopped chicken & anything you like to make it your own

  3. Add teaspoon of turmeric

  4. Add teaspoon of mushroom salt

  5. Add 1/2 teaspoon of smoked paprika

  6. Add crunched red pepper to taste

  7. Add 1/2 teaspoon oregano

  8. Cook for 15 to 20 minutes

  9. At about 16 minutes add the chicken

  10. After all is cooked drain and let cool .

  11. Place disk flat take 2 fingers dipped in water and go round the rim of the disk. This will give the disk a seal. Add a little of the filling in the middle of the disk, fold over and or either press and fold up ends or take a fork and press the edges down.

  12. Take the beaten egg and brush it over each empanada to seal and make the golden brown color.

  13. You can put 6 to 7 empanadas in an air fryer and at 360 go for about 10 to 12 minutes.

  14. Option 2) set oven at 350 degrees on cookie tray with parchment paper place the empanadas and bake for about 12 to 15 minutes or until golden brown.

  15. Grab a good bottle of wine and enjoy!
