Kevin Downey Jr's Seasoned Panko Breaded Baked Cod fish with Poor Man Potatoes

Ingredients 

  • 1&1/2 LBS of Cod Fish

  • 5 Cups of Panko Seasoned Bread Crumbs

  • 3 Table Spoons of Garlic Powder

  • 1/4 Cup of Parsley

  • 1 Cup of Locatelli Romano Cheese

  • 3 Cups of Orange Juice

  • 2 Lemons

  • 1-2.25oz Can of Sliced Black Olives

  • 1-4oz Jar of Pimentos

  • Small Bunch of Scallions

  • Salt & Pepper

Cod Cooking Instructions 

  1. Together in a large bowel, put 3 cups of orange juice and 1/2 of freshly squeezed lemon juice.

  2. Slice the code fish in 4-1/2 in pieces.

  3. Place the cod pieces in the bowl with the orange and lemon juice making sure all pieces are submerged for 30 minutes. Add more of both juices if needed.

  4. In a baking pan, thoroughly mix the Panko breadcrumbs, garlic powder, parsley, and Locatelli Romano cheese together.

  5. Take each of the marinated pieces of code and press them into the breadcrumb mixture making sure all sides are completely covered.

  6. Preheat the oven at 425.

  7. Place the code on a large cookie sheet / baking pan pre-sprayed with Pam.

  8. With a large spoon drizzle some of the left over juice over the code along with some extra breadcrumbs. Spray the top of the cod pieces with Pam and then place in the oven for 55 minutes.

 

Poor Man Potatoes Cooking INSTRUCTIONS 

  1. Slice 6 scallion stalks (green part only) into small ringlets. Then take 6 slices of jalapeños, the sliced olives and the pimentos and chop into very fine pieces, mixing them all. Include 1/2 tsp of salt and pepper with the remaining breadcrumb mixture while adding egg beaters until it becomes a wet, stick to ya fingers type of substance.

  2. With your hands, form a small patty and place them on a cookie sheet / baking pan, pre-sprayed with Pam. Spray tops of potatoes with Pam and bake in oven with the fish for the remaining 35 minutes of cook time or till golden brown and cooked inside.

 

Bonus Tartar Sauce ingredients 

  1. 1-20oz Jar of Clausen sliced Pickles

  2. 1-15oz Jar of Hellman's Mayonnaise

 

Tara Sauce Cooking Instructions 

  1. Empty the jar of mayonnaise in a medium sized bowl.

  2. Slice each piece of the entire jar of pickles longways in strips, then cut into small pieces.

  3. Mix the cut pieces of pickle in with the mayo and add pickle juice to taste.
